Ally Wraps
This is less a recipe and more an outline, from my sister in law Ally. She made this for us on a visit and i swear I ate probably 7 or 8 wraps. It's super simply, easily varied, uses up lots of veggies and is delicious!
A bunch of your favorite veggies, chopped:
Spices (your choice) A sausage of some sort (I like sweet Italian sausage, Chorizo might be more authentic), casings removed Tomatoes, shredded cheese, salsa, other toppings of choice tortillas |
In a large Dutch oven, heat oil over medium until shimmers. Add onions and sautee until translucent. Add the broccoli, squash and other veggies and sautee for a while until soft. Add spices generously (we use our friend Dave's spice mix.)
Add sausage. Break up with a wooden spoon, then cover and let cook for 5-10 minutes. Cover and keep warm until needed. Meanwhile, chop tomatoes and place in a bowl. Heat a small skillet over medium high heat. Warm each tortilla for roughly 20 seconds per side, and place inside a folded clean kitchen towel to keep warm. Add filling and toppings to tortillas and devour! |
