French Toast Cakes
These are basically just French Toast, but in hand-sized form. They're easy to make for a crowd of hungry kiddos (both full grown and small ones).
1 cup milk
4 eggs + 1 egg yolk 1 tbsp sugar 1 tsp vanilla 1/2 tsp cinnamon 6 cups cubed bread, tightly packed |
Preheat oven to 350°. Grease a squares pan or a regular muffin tin or an 8" square cake pan.
Whisk together the eggs and yolk. Heat the milk in the microwave for 1 minute, then add into the eggs. Add in the sugar, vanilla and cinnamon and whisk to combine well. Add the bread cubes and toss to combine; let the bread absorb the liquid. Spoon into the prepared pan, then bake for 15-20 minutes (muffins) or 30 minutes (cake pan), until a toothpick come out clean. If the tops start to brown too much, cover with tinfoil. |

- The original recipe calls for 4 cups bread, but I found that too eggy. Alternatively, you could reduce the liquid amount.
- Use a nice fluffy white bread or brioche or challah.
