Cabbage and Sausage Fry
Easy peasy weeknight dinner!
2-3 lbs sausage (preferably pork)
1 Napa cabbage, thinly sliced 1 onion, roughly chopped olive oil 1/4 cup apple cider vinegar |
Brown the sausage on all sides in a large skillet over medium heat. Remove the sausage and cut into coins, then toss the coins back in the skillet to continue cooking through. Remove to a plate.
Add 2 tbsp olive oil to the skillet, then cook the onion with a shake or two of red pepper flakes. Add the cabbage and cook until the cabbage wilts and sweetens (or browns nicely), about 5 minutes. Toss back in the sausage coins, drizzle with the vinegar and serve. |
