Nut-free granola
This is a great snack for the little ones - especially since it's nut-free! The rice krispies add a nice crunch, and overall it's not too sweet. This is a looser granola, not clumpy. It goes great on yogurt!
5 cups old fashioned oats
2 cups crisp rice cereal 1⁄4 cup maple syrup 1⁄4 cup honey 1/2 cup brown sugar 2 tablespoons vegetable oil 1⁄2 teaspoon salt 1 teaspoon vanilla |
Preheat oven to 350°. Spray a rimmed baking sheet with oil.
Mix the oats, rice cereal and flax seed in a large bowl. Combine the maple syrup, honey, oil and salt in a small saucepan. Heat over medium heat until the mixture homogenizes. Add the vanilla and stir to incorporate. Pour the mixture over the oats and stir to combine. Make sure the mixture is homogenously mixed; it will still look a little dry. Spread out on the baking sheet. Bake for 20-25 minutes, stirring every 5 minutes to brown the mixture evenly and prevent burning. Cool, then store in an airtight container. |

- Omit the brown sugar to reduce the sweetness of the granola.
- Add in toasted pecans!
- Replace the maple syrup with a different flavor, like Stonewall Kitchen's Apple Cinnamon syrup.
