Couscous Salad

Ingredients
Salad

• ​​2-3 cups cooked couscous
• 6 green onions, chopped
• 2 medium sized tomatoes, peeled seeded and diced small
• 1 cup cucumber, peeled and diced small
• 1/2 cup chickpeas or black-eyed peas, canned/cooked
• 1 cup chopped fresh parsley or baby spinach

Dressing:

• 3/4 cup olive oil
• 1/2 cup fresh lemon juice
• 2 cloves garlic, minced
• 1 tsp dijon mustard
• 1 tsp ground coriander
• 1 tsp salt
• black pepper to tase

1. ​Toss all ingredients together with dressing.
