Apple Cake

Danielle Murray's Apple Cake, from Jesse Imbach

3 cups flour
2 teaspoons cinnamon
1/2 teaspoon soda
1 teaspoon salt
1 cup butter
1/4 c oil
3 eggs
2 cups sugar
2 teaspoons vanilla
4 cups diced apples, 1" dice

Topping:
1 tablespoon cinnamon
1 tablespoon sugar

​Grease an angel food tube pan. 350°F oven. 

Sift together first 4 dry ingredients. In a mixer, cream together remaining ingredients except apples. 

Fold in the apples and put into the mold. Sprinkle with topping. 

Bake 1 hour and 5 minutes
