I've found that it's difficult to make small portions of protein: like steaks, or chicken breasts. So, I'll plan to make an additional fresh side to go with leftover proteins.
inspired by NYTimes, try avocado toast, mothership tomato salad, eggplant dip, hummus with meat all over, navy bean dip, etc. Pair with a salad and grilled flank steak for a more robust meal.
