Easy Cornbread

1/2 cup (1 stick) butter
2/3 cup sugar 2 eggs 1 cup buttermilk 1/2 teaspoon baking soda 1 cup cornmeal 1 cup flour 1/2 teaspoon salt |
1. Preheat oven to 375°. Grease an 8x8 pan.
2. Melt the butter in a large saucepan. Remove from heat and stir in sugar. Quickly add the eggs and beat until well blended. Combine buttermilk and baking soda just before pouring the mixture into the pan and stir to combine. Stir in cornmeal, flour and salt until combined. Pour batter into prepared pan. 3. Bake for 30 to 40 minutes, until a toothpick inserted into the center comes out clean. |
