Watermelon and Feta Salad
Autumn brought this to a summer barbecue, and at first I was skeptical; watermelon.. and feta? With olive oil? Turns out, you should always trust Autumn - this is delicious and refreshing on a hot summer's day!
6 cups of large chunks of watermelon
100g feta, sliced or crumbled into chunks
a handful of basil leaves, schiffonaded
1 small shallot, sliced very thinly
generous drizzle of olive oil
dash of coarse sea salt
dash of coarse ground pepper
On a large platter, arrange the watermelon chunks, feta, shallot and basil. Immediately before serving, drizzle olive oil over the salad, and sprinkle a pinch of coarse sea salt and a pinch of coarse ground black pepper.
