While strange-sounding, the pan-banging does give these cookies a lovely texture alternating between crunchy and chewy.

- I cheat and just use semisweet and bittersweet Ghirardelli chocolate chips.
- Using a 4 tbsp scoop, I ended up with 16 cookies, not 12.
- I haven't tried to make these smaller yet, but I assume you would reduce the overall baking time - and the pan-banging time - accordingly.
