Oatmeal Blueberry Muffins
More yummy toddler muffins! Bonus: these are vegan!
1 cup oat flour
1 cup all-purpose flour
2 tsp baking powder
1 tsp baking soda
¼ cup brown sugar
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp salt
1 cup + 1 Tbls unsweetened applesauce
2 Tbls maple syrup
¾ cup blueberries
Mix all dry ingredients in a large mixing bowl.
Mix the wet ingredients in another smaller bowl.
Combine the wet and the dry and mix until combined.
Fold in blueberries.
Use a tablespoon to drop level spoonfuls into a greased mini muffin pan. Bake at 350 degrees for 12-15 minutes.
