Warm orzo with red onion and scallions
from the mind of Autumn Quinn! Very yummy light side dish.
1/2 red onion, chopped fine
3-4 scallions, chopped
2 cups orzo
1 tbsp butter
1. Start a pot of water boiling.
2. Meanwhile, saute the onion and scallion in a bit of oil until softened. Season with a pinch of salt.
3. Cook orzo until al dente and drain.
4. Add orzo, butter, onions and scallions to a bowl and toss to mix, melting the butter. Season with salt and pepper.
Autumn adds: "A jar of the sun dried tomatoes chopped up would have also gone well here!"
