Mochi
Mochi is a traditional Japanese sweet made from glutinous rice flour. It is delicious! You may have encountered it in mochi ice cream or in moon cakes, where the mochi surrounds either ice cream or a red bean paste. It's easy to make at home! (from allrecipes.com)
1 lb mochiko (glutinous rice flour)
2.5 c sugar 1 tsp baking powder 2 c water 1 tsp vanilla extract 1 can (14 oz) coconut milk 1.5 c potato starch |
1. Preheat oven to 350°. Grease a 9 x 13 inch pan and line with parchment paper.
2. Whisk together rice flour, sugar and baking power. In a separate bowl, mix water, coconut milk and vanilla extract. Blend the rice flour mixture into the coconut milk mixture. Pour into prepared pan. 3. Tightly cover the pan with aluminum foil and bake for 1 hour. Allow to cool completely (usually overnight). 4. Turn mochi brick out onto surface dusted with potato starch. Cut into bite sized pieces and dust each with potato starch to keep them from sticking to each other. |
I've found these pieces stay nice and chewy for about a week if stored in a sealed plastic bag.
You can experiment with colors and flavors too! Add any food coloring to the water mixture before incorporating the flour mixture. You can substitute other flavor extracts for the vanilla extract.
