Asian Chicken Salad
Delicious! Worth all the chopping :)
1-2 chicken breasts, poached, cooked and pulled to pieces
2 carrots, chopped or julienned
1 apple, cored and chopped
1/2 red bell pepper, chopped or julienned
1/2 yellow bell pepper, chopped or julienned
1/2 head romaine lettuce, chopped
1/2 cup canned fried chow mein noodles
1/4 cup dry roasted peanuts, chopped
1 green onion, sliced
1/4 cup peanut oil
3 Tbsp creamy peanut butter
2 tbsp rice vinegar
1 tbsp soy sauce
2 tsps brown sugar
1 tsp minced geinger
Combine the lettuce, veggies, chow mein noodles and chicken.
Combine the dressing ingredients; whisk until smooth.
Toss salad with dressing; sprinkle dressed salad with peanuts and scallions.
- To make ahead, pre-chop the veggies and make the dressing, then assemble when ready to eat.
