Famous Waffles Clarence, Steve remix
We got this recipe from a friend when we needed to get more fiber into our little one. These waffle are a-MAY-zing! They are sturdy yet tender, with a delicious chew and a lovely sweet/savory flavor balance. They reheat wonderfully in the toaster oven too so make a big batch and freeze 'em!
1 cup whole wheat flour
1/2 cup golden flax seed meal 1/2 cup toasted wheat germ 1 teaspoon baking soda 1/2 teaspoon salt 2 Tablespoons (heaping ☺) brown sugar 1 cup milk (plant or regular) 3/4 cup yogurt (regular or Greek) 1/4 cup veg oil 2 eggs |
Combine wet, mix.
Combine dry, mix. Combine wet and dry, mix. Cook in waffle iron until desired brown-ness (in my waffle iron that was about setting 4). You may want to spray the waffle iron with oil to prevent sticking (I did this for the first waffle, and all the following ones released fine without re-application). Eat plain, or with toppings of your choice! |

- The Steve remix uses 1 cup milk + 3/4 cup yogurt. The OG recipe calls for 1.5 cups milk and no yogurt, but we always have lots of Greek yogurt around so I like to use that.
- This recipe makes roughly 3 batches on my 4-square-waffles iron.
