Garlic Caesar Salad
If you like dressing you may want to double this recipe :) also - anchovy free!
1 egg
1 garlic clove (I added one more cause i like garlic) Pinch and a half salt 1 tsp Dijon mustard 1 tbsp lemon juice 1 tbsp olive oil 1 to 2 bunches romaine lettuce, washed and shredded 1-2 tbsp Parmesan cheese Croutons |
Get out the salad bowl. Sprinkle the salt in the bottom. Peel and lightly crush the garlic. Rub the salt in the bowl with the garlic, then, using a fork, crush up the garlic with the salt. Add the mustard, lemon juice and olive oil and whisk together well. add the romaine lettuce and toss well.
Bring a small pot of water to a boil. Add the egg and let boil for 1 minute, then remove. Sprinkle parmesan over lettuce and croutons, then crack egg into salad. Toss well and serve. |
