Garlic Caesar Salad
If you like dressing you may want to double this recipe :) also - anchovy free!
1 garlic clove (I added one more cause i like garlic)
Pinch and a half salt
1 tsp Dijon mustard
1 tbsp lemon juice
1 tbsp olive oil
1 to 2 bunches romaine lettuce, washed and shredded
1-2 tbsp Parmesan cheese
Get out the salad bowl. Sprinkle the salt in the bottom. Peel and lightly crush the garlic. Rub the salt in the bowl with the garlic, then, using a fork, crush up the garlic with the salt. Add the mustard, lemon juice and olive oil and whisk together well. add the romaine lettuce and toss well.
Bring a small pot of water to a boil. Add the egg and let boil for 1 minute, then remove.
Sprinkle parmesan over lettuce and croutons, then crack egg into salad. Toss well and serve.
