Basic Fresh Pasta
from Jeanne! Please note you'll need a pasta maker to do the kneading and rolling of the dough.
2 1/3 c flour
3 eggs 1 tbsp olive oil 1 tbsp water, if needed |
1. In the food processor, mix the first three ingredients with the blade. Don't overmix it - pulse it until it appears like sand. Add water 1 tablespoon at a time until the dough reaches the desired consistency - dry, and clumps when pinched between your fingertips.
2. Dump out and pack into a cohesive dry dough. 3. Pinch off a small portion and flatten into a small disk. Roll through Number 1 on the pasta machine, then fold it in half. Repeat up to 4 times. Roll once through up through each number (go up to 7 for fettucine, 6 for lasagna noodles). If using, roll through fettucine cutter. Hang on pasta stand to dry. 4. Salt and boil water. Add fresh pasta to water and cook (it won't take long!). Serve with sauce. |
