Grapefruit Tart
From Cook's Country, this is a very tart tart. Very tart. You have been warned ;)
Crust:
1.75 c rolled oats .75 c flour .5 c packed brown sugar 2 tbsp minced grapefruit zest 1 tbsp minced ginger .5 tsp salt 1 stick unsalted butter, melted Topping: 1 8 oz pkg cream cheese 1/3 c sour cream 2 tbsp brown sugar 3 cups grapefruit segments coarse sea salt |
Preheat oven to 350°.
In a food processor pulse together the oats, flour, brown sugar, 1 tbsp zest, ginger and salt. With the machine running, drizzle in the melted butter until mixture clumps. Press the mixture into a 9" tart pan. Bake until firm, roughly 20 minutes. Let cool to room temperature. Combine cream cheese, sour cream, 1 tbsp zest and brown sugar until combined and smooth. Spread mixture over crust. To remove segments, cut away rind, then slice down the side of each membrane to remove segments. Arrange segments on tart. Chill. Sprinkle with sea salt and serve. |
While this is very much not to my taste, my other half adores it, so I make it for him on special occasions. :)
