Blue Smoke Deviled Eggs
I inherited this recipe from my friend Alyssa, and it makes the best Deviled Eggs I've ever tasted!
2/3 cup mayonnaise
1 1/2 tsp tarragon-infused vinegar
3/4 tsp dry mustard powder
2 1/2 tsp Dijon mustard
1/3 tsp cayenne powder
1/2 tsp curry powder
paprika to garnish
1. Place eggs in the bottom of a large saucepan in a single layer. Cover with water plus one inch. Bring water to a boil, then cover, remove from heat and let sit for 10 minutes. Dunk eggs in cold water and shell. Cut in half lengthwise and use a spoon to remove yolks to a large bowl.
2. Add mayonnaise, vinegar, both mustard, cayenne power and curry powder to yolks. Mix until smooth. Add salt and pepper to taste.
3. Pipe yolk mixture back into egg halves (using a star tip if you want to be fancy). Sprinkle with paprika and serve.
