Seared Salmon Fillets with Balsamic Glaze
1/4 cup balsamic vinegar
1/4 cup orange juice 2 tbsp honey 1/8 tsp red pepper flakes 2 tsp vegetable oil 2 skin-on salmon fillets (6 oz each) salt and pepper 2 tbsp unsalted butter |
1. Whisk together vinegar, orange juice, honey and red pepper flakes. Set aside.
2. Heat the oil in a non-stick skillet over medium high heat until smoking. Season the salmon fillets generously with salt and pepper. Cook, skin side up, until well-browned, about 4 to 5 minutes. Flip the fish skin side down and cook until all but the center is opaque, 2 to 3 minutes. Remove to plate, tent with foil to finish cooking. 3. Wipe out the skillet with paper towels. Carefully pour the vinegar mixture into pan (it will splatter!) and simmer until thick and syrupy. Whisk in the butter, season with salt and pepper and pour over the salmon. Serve. |
