Oven-roasted cabbage and chard
Ok, I get it - the name of this dish alone makes you grimace. But in my quest to eat healthier and find cabbage recipes for the hubby, this one turned out amazingly delicious!
Half a head of green cabbage
one bunch of chard garlic cloves (as many as you like!) 1/2 cup chicken broth olive oil salt and pepper |
Preheat your oven to 350°.
Remove the stems of the chard; roughly chop and toss into a big baking dish. Tear the leaves into bite sized pieces and add to the stems. Roughly chop the cabbage and add to the chard. Thinly slice the garlic and toss it in. Pour a generous amount of olive oil over the veggies, then pour in the chicken broth. Use tongs to toss gently. Cover the dish with foil and bake for 15 minutes to start steaming things. Then, remove the foil, season with salt and pepper, and bake for an additional 20-25 minutes, until the cabbage is to your liking. Serve with sausages! |
