Breakfast Apple Granola Crisp
A delicious way to start your day from Deb! There's a bit of sugar in the apples, and some honey in the granola, but you can try reducing these and see how it tastes.
3-4 pounds apples
2 tbsp lemon juice 3 tbsp sugar 2 tbsp cornstarch Healthy dash of cinnamon Pinch of salt 1 stick unsalted butter 1/4 cup honey 1/2 cup flour 2 cups rolled oats 1/2 cup chopped toasted pecans 1/2 cups rice krispies |
Preheat oven to 375°.
Peel, core and roughly chunk the apples. Toss them with lemon juice, sugar, cornstarch, cinnamon and salt. Pour them into a 2 1/2 quart baking dish (not as big as a 9x13 but bigger than an 8x8). Measure the honey out in a microwave safe measuring cup. Add the butter and then melt together in the microwave. Stir to combine. Mix together the oats, pecans, rice krispies and flour in a bowl. Pour in the melted butter and honey, and store to evenly combine all ingredients. Spread the granola evenly over the apples, then place in the oven to bake for 40-45 minutes, until the granola is crisp and the apple filling is bubbling. Halfway through baking, cover the granola with foil to prevent it from burning. Remove the foil for the last three minutes of baking to recrisp the granola topping. Eat along or on top of plain yogurt. This keeps well in the fridge. |

- I added more apples, lowered the oven temperature by 25° and changed the granola mix-ins.
Notes:
- For the granola topping, feel free to mix and match your favorites add-ins. Deb starts with 1/2 cup of shredded coconut and 1/2 cup sliced almonds, but I love the flavor of toasted pecans and the crunch of the rice krispies. Just make sure that the total volume of dry ingredients is 3 cups.
