Baked Chicken with Orange Sauce
3 lbs chicken parts (thighs are better)
4 tsp Dijon mustard
2 tbsp butter, cut into small pieces
salt and pepper
1 1/2 cups orange juice
1/4 cup brown sugar
Preheat oven to 375°.
Smear mustard over the skins of the chicken parts.
Arrange the chicken in a single layer, skin side down, in dutch oven.
Sprinkle chicken with the onion, butter, salt and pepper to taste.
Pour orange juice around the chicken.
Bake uncovered for 20 minutes, basting once.
Flip chicken over and sprinkle with the brown sugar.
Bake an addition 15 to 20 minutes.
To make a sauce from the OJ, put dutch oven on the stovetop and simmer until reduced and thickened. Add 2 tbsp butter and whisk in until smooth.
