Fast Buttery Peas for Two
A quick side dish from Cook's Illustrated, specially sized for two! Note: Do not thaw the peas before adding them to the skillet.
1 tbsp butter
1 small shallot, minced 0.5 tsp minced fresh thyme 1 small garlic clove, minced 1.5 c frozen peas (~8 oz) 1 tsp sugar |
Melt the butter in a 10" skillet over medium heat. Add the shallot, thyme and garlic and cook until softened, about 1 minute. Stir in frozen peas and sugar. Cover and cook until peas are heated through, about 3 minutes. Season with salt and pepper and serve.
