Sweet Potatoes with Ginger and Lemon

2 pounds sweet potatoes
2 tablespoons canola oil 1/2 teaspoon mustard seeds 2 small green serrano chiles, cut horizontally in half 1 medium red onion, finely chopped (about 1 1/2 cups) 1 teaspoon freshly grated ginger (about 2" piece) 1/2 teaspoon ground turmeric 1/2 to 3/4 teaspoon salt 2 tablespoons lemon juice, or to taste |
1. Boil the sweet potatoes in water to cover until just tender. Cool, peel, and cut into 1" pieces.
2. Make the tadka: Heat the oil in a large saute pan over high heat. When the oil begins to smoke, add mustard seeds, covering the pan with a lid or spatter screen. When the seeds stop sputtering, add the chiles. When the chiles are toasted, add the onion and ginger. Saute until the onion is lightly browned, then add the turmeric and stir. 3. Add the sweet potatoes and salt and toss gently to mix. Cover and steam over low heat until the flavors meld, about 4 minutes. Sprinkle with lemon juice and serve. |
